Ingredients

  • 3/4 cup (170g) butter, softened
  • 1 cup (200g) granulated sugar
  • 1 large egg
  • 1/2 tsp vanilla extract
  • 1 cup (250g) mashed ripe bananas
  • 2 cups (180g) rolled oats
  • 1 1/2 cups (210g) all-purpose flour
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 1/2 cup (60g) chopped pecans

Directions

    Heat the oven to 400°F. Cream the butter and sugar until light and fluffy, then beat in the egg, vanilla, and mashed bananas. Combine the oats, flour, cinnamon, salt, and baking soda, and fold into the creamed mix. Fold in the pecans. Drop rounded tablespoons onto a lined sheet and bake 11–13 minutes. Cool briefly, then finish on a rack.
