Ingredients

  • 32 marshmallows (or 4 cups / 200g mini marshmallows)
  • 3/4 cup (180ml) whole milk
  • Juice of 1 lemon
  • 1 cup (250g) mashed bananas
  • 1 tsp vanilla extract
  • 1 1/2 cups (355ml) heavy cream
  • 1/3 cup (85g) chopped maraschino cherries

    Melt the marshmallows in the milk in a saucepan over low heat, stirring until uniform. Add the lemon juice and mashed banana, take off the heat, stir in the vanilla, and transfer to a large bowl to cool completely to room temperature. Whip the heavy cream to stiff peaks (don't overwhip). Fold the whipped cream into the cooled marshmallow mixture in three additions until uniform, then fold in the cherries. Pour into a shallow 9x13-inch dish, cover, and freeze. For a smoother texture, every 40 minutes stir and pull the frozen edges inward — repeat 3–4 times. Let it soften ~30 minutes before serving.
