Ingredients
- 1 cup shortening
- 1 cup brown sugar
- 1/4 tsp. salt
- 1 tsp. vanilla
- 2 well-beaten eggs
- 1 tsp. soda dissolved in 2 Tbsp. water
- 3 cups flour sifted with 1 tsp. baking powder
- 1 pkg. dates
- 1 cup water
- 1 cup sugar

Cream the sugar and shortening well. Add the remaining dough ingredients and mix thoroughly. Chill. For the filling, cook the dates, water and sugar slowly for 1/2 hour. Roll out the dough, cut with a round cutter (2" diameter). Place 1 tsp. filling on a cookie. Cover with another — pinch the edges. Bake at 375 degrees for 10 to 12 minutes. Frost with Penuche Frosting.
