Ingredients
- 1 can (18 oz.) sweet potatoes
- 1 1/4 cups brown sugar
- 1 cup fresh or canned apricots
- 1 cup apricot juice
- 1 cup pecans
- 1 Tbsp. cornstarch

Directions
- 1
Put the potatoes in a pan and spread the apricots and pecans around. In another pan, mix the sugar, juice and cornstarch; cook until thickened. Pour over the potatoes and bake 1 hour at 375°F.
