Ingredients

  • 2 cans (11 oz/312g each) mandarin oranges
  • 1 jar (10 oz/283g) maraschino cherries
  • 1 can (20 oz/567g) crushed pineapple
  • 1 1/4 cups (315ml) heavy cream
  • 1/2 cup (125g) sour cream
  • 1 cup (115g) chopped pecans
  • 2 cups (100g) mini marshmallows
  • 1/2 cup (70g) sweetened shredded coconut (optional)

    Drain the mandarin oranges, cherries, and crushed pineapple, then lay them on paper towels to dry. Whip the heavy cream to soft peaks (don't overwhip). Fold in the sour cream, then the pecans, marshmallows, and coconut. Fold in the cherries and pineapple, and finally the mandarin oranges (last, since they break easily). Transfer to a serving bowl, cover, and keep refrigerated.
